Pumpkin Soup

Pumpkin Soup (serving size:4)


  • 1 butternut squash 
  • 2 medium onions
  • 2 cloves of garlic
  • 1 l of vegetable stock
  • 1 tsp Curry Powder
  • 1 tsp powdered paprika 
  • 3 sprigs of thyme

Fry the finely chopped onion, minced garlic and the pumpkin pieces in little olive oil. Add the curry and paprika powder, the chopped unions, pepper, salt and thyme. Let it simmer for two minutes, then moisten with the vegetable stock and leave it to simmer for 15 more minutes. Remove the thyme. Mix the soup and flavor with some extra fresh ground salt and pepper. Add some more stock if the soup is too thick. Pour the soup into 4 bowls.
