Chicken Soup

After the pumpkin soup Anne shared with us this week she is now showing us how to make this chicken soup from Le Creuset. Yum!

Chicken Soup (serving size:4)

  • 1l of chicken stock 
  • 300 grams chicken fillets
  • 2 shallots
  • 2 stalks of celery
  • 1 carrot
  • vermicelli 
  •  juice of 2 lemons

Clean the vegetables and cut into pieces. Heat the olive oil in a large pan. Add the shallots, celery, chicken breasts and the carrot and simmer on a low heat for 4 minutes. Keep stirring regularly. Add the lemon juice together with the chicken stock to the vegetables and bring slowly to the boil on a low heat for 15 minutes.
