Healthy Strawberry Cakes

These muffins are perfect for strawberry lovers!

Ingredients for 6 muffins

- 8 sugarfree cookies

- 250 gram strawberry quark

- 3 gelatin sheets

- 4 tbs coconut oil (melted)

- 2-3 strawberries

- optionally: grated coconut

Crumble the cookies in a food processor and mix in the coconut oil. Cover the base of 6 muffin tins and put them in the freezer for 15 minutes. Soak the gelatin sheets in the meantime, squeeze the water out and mix them with 1.5 tabelspoon of boiled water. Mix until the gelatin is dissolved and add 1 tbs quark. Mix well and add the remaining quark. Put this mixture on the cookie bottom. 
Cut the strawberries and decorate each cake, optionally you can sprinkle some grated coconut on top. 

But the strawberry cakes in the fridge to set for at leas two hours, but preferably overnight.
