Carrot Pancakes

Our guest blogger Milou from Healthinut shows you how you can get your daily dose of veggies by using them in every meal of the day. She starts with breakfast and made carrot pancakes!

Carrot Pancakes (serving size: 1)

Ingredients:

  • 1 egg

  • 50 gram grated carrot

  • 40 gram oats

  • 1/2 ripe banana

  • 1 tsp honey

  • 1 tsp cinnamon

  • 1 tsp chia seeds

  • 1/2 tsp baking powder

 

Preparation:

  • Mash the banana with a fork in a bowl. Add the egg, honey, cinnamon, chia seeds and baking powder. Mix well and add the grated carrot and oats and mix again.

  • Place a pan on medium heat and use some PAM spray or add (coconut) oil. One big tablespoon makes about one pancake, the dough makes 6 pancakes in total. Bake the carrot pancakes a few minutes on each side until golden brown.

  • Place pancakes on top of each other to make a nice pancake stack. Add some extra grated carrot or fresh fruits and finish with maple or pancake syrup.
